Here's another marinade. I used it on pork chops, but it could easily work for chicken. We had our annual Labor Day party, and people complimented me on this marinade.
Ingredients
2 bottles of Dos Equis dark lager
I clove of garlic, minced
3-4 scallions, chopped roughly
3 tablespoons of kosher salt
Ground black pepper to your liking
Process
Put all this stuff into a mixing bowl, whisk until the salt dissolves, and pour it into a plastic bag with your meat.
